Difficult to pick just one.

Sid Meier's Alpha Centauri and Civ series

X-COM 1&2

Fallout Series, I even liked Fallout Tactics.  3 and new vegas not so much

I love D&D (2nd edition kind of my favorite) but I gotta mention Top Secret S/I.  We had a lot of fun playing that one, and I even got to meet the author of the original Top Secret game a few years back.
