1000 years is fringe indeed. But there have been studies done that strongly suggest that a very spare and plain diet with a modest exercise regimen (as in, take a 20 minute walk after each meal) can extend lifespans by 20+ years.
Plus no drugs, alcohol, or stimulants of any kind including coffee or tea.
The only question remaining is philosophical one: Is such a life worth living at all, much less 20+ years of living hell longer?
1,000 years is science fiction. As Revaulting pointed out, it doesn't matter how pure your diet and exercise is, our cells break down over time due to more than just diet and exercise.
If it were possible to live for extreme times just due to diet and exercise, then in our relatively peaceful times, many islander and isolated cultural still living agrarian/nomadic lifestyles would have people well over 100.
I think the origin of the study you refer to might have been the study of the residents of Okinawa who have average lifespans well above most western cultures, attributed in part to a basic diet and some regular exercise.
If the extra 20 years is quality, like the Okinawans, then count me in.
If it is just an extra 20 years at the end, lying in a bed in a semi-vegetative state wearing a diaper and drooling inanely to myself for 20 years - no thanks.
Modern medicine and technology is extending our lifespans, but for many, it is just living longer in a crappy state and being a burden on our families.
